It's a Party with Delicious Dishes

Today is Delicious Dishes..

Bean Bundles


I have fallen in love with this recipe, and I promise you that it is a 'Must Try.'

Ingredients:

Whole Green Beans
1 pkg. of Bacon
Brown Sugar
1/2 cup margarine
Dash of salt and pepper


Drain green beans and put into a bowl.  Cut bacon slices in half and wrap around bundles of green beans.  I usually put 7 or 8 beans per bundle.  Place the bundles in a 9 x 13 casserole glass dish.  Combine brown sugar, dash of salt and pepper, and melted margarine.  Pour over the bundles.  Cook on 375 for 30 minutes or until bacon is done.

Greek Feta Burgers


A little over a month ago my blogging friend Courtney over at One Mom's Perfect Imperfection went on vacation and I guest posted the recipe below for her.  I decided that I would share it with all of you in case you missed it.  


These burgers are great after spending a day on the beach soaking up some rays with a good book or for all of your summer afternoon barbecues.

Greek Feta Burgers



Makes 4 servings
Hands on: 20 minutes
Ingredients:
1 pound ground chuck
1 (6-ounce) package crumbled feta cheese
1 garlic clove, minced
¼ cup chopped fresh mint
1 teaspoon salt
½ teaspoon pepper
1 teaspoon chopped rosemary
Fresh Spinach leaves
4 Hamburger Buns with onions (optional Pita Bread)
2 plum tomatoes
1 small onion
Cucumber Dill Sauce

Combine first 7 ingredients; shape into 4 patties.

Grill patties, cover with grill lid, over medium high heat for 5 minutes on each side or until done.  Place patties on spinach lined hamburger buns.  Top with tomatoes, chopped onion, and Cucumber Dill Sauce.



Cucumber Dill Sauce
Makes ½ cup
Hands on: 5 minutes
Ingredients:
¼ cup peeled, seeded, and diced cucumber
¼ cup sour cream
½ teaspoon chopped fresh dill
1 garlic clove, minced

Stir together all ingredients.  Cover and chill until ready to serve.


These burgers are delicious and are even more delicious with oven roasted potatoes.  Just sprinkle the potatoes with a little greek seasoning to compliment the flavors. Hope You Enjoy and Have a Wonderful Week!

Kitchen Belleicious is one of my favorite blogs especially if I am looking for something new and tasty.  Ms. Belleicious is alway serving up some tasty recipes that I can not wait to try when I am not so busy. (Ah when break, hits I'll be printing out quite a few.)  She serves up a variety of tasty dishes whether it is breakfast foods or a tasty desert for all to share. 

I asked Ms. Belleicious to write a little about her blog so here it goes:

I am not really sure how to sum up the life of Ms. Belleicious! LOL! It’s not that I am that exciting, I am just crazy! Ha! Only kidding! Okay, let’s start from the beginning. I am  proud to be raised southern from a small town in Louisiana. My husband has to be the most sweetest and loving man I know! He is my rock and supports me in everything I do. Whether it is cooking or playing tennis or something silly, he has and always will be there for me. I met him 5 years ago at LSU and I have had the time of my life since then sharing each day and moment with my soul mate. I know everyone says their husband is the best but this man truly is my dream and he makes me smile everyday. My husband has given me one of the best gifts and that is our son. He just turned 1 and he is my life. I never knew I could feel this type of love until now. Everyday I strive to be the best mom I can be, to raise him to love others and to be kind. 

Kitchen Belleicious is my new baby! It is a project I started back in January from a huge push, or rather shove, from my family and friends. Cooking is my passion ,my obsession. I took a leap of faith doing this website because I have never considered myself a writer but I am so glad I have-otherwise I would have never had the chance to meet so many wonderful women. I love to make new things, try something I have no idea how to make and just put a smile on people’s faces watching them eat something they love. My goal with Kitchen Belleicious is to help other women like myself find out tricks of the trade, new flavors and seasonings and methods you never knew existed and most importantly, I hope Kitchen Belleicious gives someone that extra push to make a new dish and the confidence in your own cooking abilities. Be fearless in the kitchen is my motto. Anyone can cook, you just got to get in there and do it, believing in yourself. We all make mistakes. Believe me not everything Ms. Belleicious cooks turns out perfect but the point is to try! It isn’t just about cooking to have something to eat. It is about the creativity and the love that goes into creating something for others to enjoy.

Cook, Eat, Enjoy Yall with a Guest Post

Today I am turning this over to the ever so lovely Courtney!

Bon Appetit Ya'll


Hey y'all! I'm honored to be guest posting for Jes today. And since she is a tad obsessed with Mexican food, I thought I'd feed her obsession by sharing one of my all time favorites with her and all of you.   Enchiladas are something that my family makes when we want to treat ourselves. They are a little time consuming but easy to make with only a few key ingredients.  So let's get cooking!
So here's what you'll need:



2 pounds ground beef 1 large onion 2 pkgs shredded cheese 2 cans enchilada sauce 1 pkg corn tortillas Vegetable oil
These amounts are what I used to make 20 enchiladas. Adjust accordingly, but you'll want leftovers. I promise. And, of course, you can use chicken instead of beef, leave out the onions, whatever your preference is. Make it yours. First, dice up your onion.




Brown your ground beef. Be sure to drain off the grease and set aside to cool.
Then I usually set myself up a station that looks like this to make things easier...

Next, add vegetable oil or canola oil to a pan and heat it up. Do the same for the enchilada sauce in a separate pan. You'll want the oil fairly hot because you want the tortilla to cook quickly; however, you only want the enchilada sauce warm because you'll be rolling the tortillas by hand and you don't want them scorching hot. Once your oil is heated up slide your tortilla into the pan. When you see it start to bubble up, give it a couple of more seconds. You'll actually hear the sizzle begin to slow down. Then pull it out, draining the excess oil.




Then slide same tortilla into your enchilada sauce. You simply want to coat the tortilla.

So when the tortilla is good and coated, transfer it to your rolling plate. I usually stack up about 5 or 6 of these at a time.   Once you start filling and rolling your hands will be really messy and washing them between each tortilla is just too much.  But if you stack up too many then the tortillas will start to stick together.





Then start filling your tortillas. Be sure to not over fill them or you'll never be able to roll them or transfer them to your casserole dish.





So I couldn't exactly take a picture of me rolling them up but once you roll them up individually, place them into your casserole dish side by side.





Once you've filled your pan, spoon a little enchilada sauce on top to keep them from being dry. And then with cheese and any remaining ingredients - don't waste it!





Cover dish with aluminum foil and bake at 350 degrees just until the cheese on top is melted. Remember, all of your ingredients are already cooked. You just want to melt the cheese. Now, I owe you an apology because in all of my excitement of pulling these babies out of the oven I totally forgot to take a picture of the finished product. Spicy New Potatoes

Ingredients:
Red Potatoes
Tony's Cajun Seasoning
Salt and Pepper
Rosemary
Olive Oil

Directions:
Slice potatoes into wedges

Cover a pan with tinfoil and spray with cooking spray

Spread potatoes on pan

Drizzle Olive Oil over potatoes

Then sprinkle tony's reasoning, salt, pepper and rosemary over potatoes

Cook on 425 for 30 minutes

Chicken Bacon Ranch Quesadillas

This recipe is a little different than other recipes that I post about.  I got the inspiration for this dish from Chili's... One of my favorite dishes there is their Chicken Bacon Ranch Quesadilla with their southwestern ranch sauce.. So here is My Version..

Ingredients:
1 chicken breast (1 chicken breast per person)
Real Bacon Crumbles 
Shredded Cheese of your choice
Ranch
Tortillas

Tostitos has a Southwestern Ranch Sauce.

Directions:
Turn stove top on medium heat.

Place Tortilla in pan

Spread Cheese, Bacon, Ranch and Chicken on tortilla.

Then place other tortilla on top.

Don't flip until you can feel the heat come through the other side...

Then flip 

You are done when you have reach your desired crispiness.

(Note: Keep on low to medium heat or tortilla will burn before you can flip.)

Before the top is placed on quesadilla..

All done and crispy..

Gooey Cinnamon Rolls with cream cheese icing

Gooey Cinnamon Rolls
with cream cheese icing
PER SERVING: (1 Iced Roll) 126 calories, 5g Fat, 308 mg sodium, 18.5g carbs, <.5g fiber, 6.5g sugar, 3g protein

Ingredients:
For Dough - 
1 package Pillsbury Reduced Fat Crescent Rolls - refrigerated dough
16 sprays of "I Can't Believe It's Not Butter! Spray

For Filling - 
1/4 cup dark brown sugar (not packed)
1/4 cup Splenda No Calorie Sweetener (granulated)
1/2 tablespoon light whipped butter or light buttery spread, room temperature
1 1/2 teaspoons cinnamon
1/8 teaspoon salt

For Icing - 
1/4 cup Cool Whip Free, thawed
3 tablespoons fat-free cream cheese, room temperature
1 tablespoons Splenda No Calorie Sweetener (granulated)

Directions
Preheat oven to 375 degrees.

To make filling, combine all ingredients into a medium bowl, stirring well to make sure the butter gets mixed in evenly. Set aside.

To make icing, combine all ingredients in a small bowl and mix until smooth and blended.  Place in the fridge to chill and set.

Prepare a dry surface by sprinkling it with a small amount of flour to prevent sticking.  Remove dough from package and knead into a ball.

Using a rolling pin dusted with flour, very firmly roll out dough into a thin sheet about 8 inches by 12 inches.  Spray the dough's surface evenly with butter.

Spread filling out evenly over dough, leaving a 1/2 inch border around the edges.

Starting with a long side of the dough, roll it up tightly, forming a log.  Once dough is completely rolled up pinch the long seam to seal.

Turn the log over so that the seam is facing down.  Using a very sharp knife, cut log into 8 even pieces being careful not to squish dough.

Spray a baking pan with nonstick spray and arrange pieces of dough in the pan with swirl sides facing up.  Use your hands to firmly press down on the tops of the pieces.  Pinch the side seams to seal if necessary.

Cover pan with aluminum foil.  Bake in oven for 8 minutes.  Remove foil and return pan to oven.  Bake for an additional 5 minutes, or until cinnamon rolls have risen and are slightly browned on top.  

Evenly distribute icing over cinnamon rolls and then enjoy!

THE RESULTS:
I wish I could say that these were the most delicious cinnamon rolls ever, but I'm starting to understand that Pillsbury Cinnamon Rolls were made for a reason.  The reason being is the disaster below...



I promise I followed every step just as it said, but DISASTER happened.
My cooking skills don't always turn out perfectly and this is proof.

Pasta Craze



Here is a Recipe from My Kitchen to Yours:

Chicken Parmesan
Ingredients:
- 1 egg
- 1/2 Cup of Parmesan Cheese
- 1/4 Cup of Bread Crumbs
- Tony's Seasoning
- 4 Boneless Skinless Chicken Breast Halves
- 1/4 Cup of Olive Oil
- 1/4 Cup Mozzarella Cheese
- Linguine Pasta
- 1- 3/4 cup of Marinara Sauce

Beat egg lightly in a shallow dish. Mix parmesan cheese, bread crumbs, and Tony's Seasoning in a separate shallow dish. Dip chicken in egg, then in cheese and bread crumbs mixture, turning evenly to coat both sides of each chicken breast with the cheese and bread crumbs mixture.


Heat oil in large nonstick skillet on medium-high heat.

Start the preparation of your pasta so it's ready before chicken is complete.


Add chicken; cook 6 minutes on each side or until cooked throughly. Top with mozzarella cheese; cover. Reduce heat to low. Cook 3 minutes or until mozzarella cheese is melted.


Place hot linguine on platter; top with the marinara sauce and chicken.



One afternoon, I started looking for a new and simple recipe to try. However, the only problem was that I didn't wanna run to the store to buy special ingredients. This is a recipe that I came across on Kraft's Website.
